For a perfectly festive Easter, may I suggest the Gonet Blanc de Blancs 2009 as an apéritif. If serving lamb or ham, I would choose the Bazin, Fleury, Vilmart, or Mignon. The Fleury and Mignon are divine with rich, "brunchy" egg dishes. "Dinner is Served" is an easy and elegant Champagne dinner-in-a-box.
