Rubis is 10% Chardonnay, 90% Pinot Noir, macerated on its skins for color. In previous years this has been produced by adding 15 or so percent of red wine, but this disgorgement was produced as a saignee. The wine comes from the 2010 and 2009 vintages, all sourced from Rilly-la-Montagne. Like all of Vilmart's cuvees, this wine does not go through malolactic fermentation and spends time in oak.
* Biodynamically produced: Biodynamic methods are the strictest form of organic viniculture. Biodynamic wine is not only 100% organic, in addition, the grower has gone to great lengths to bring the farming process more closely in tune with nature and the lunar calendar. Production methods often reflect the practices of the 1800s.
