“Le Fond du Bateau” is a lovely Blanc de Blancs made from 100% Chardonnay grapes grown in a single Grand Crú vineyard in Chouilly. This bright Champagne features aromas of ripe citrus, vanilla, and toasted bread. On the palate, it asserts itself with a balance of power and finesse, strong aromatics, and a soft minerality. Pair it with chicken with béchamel sauce, seafood, or spicy Indian or Thai cuisine.
Pertois-LeBrun is the story of five generations of tradition. The Pertois family began producing and selling their own champagne in the early 1900s; and the Pertois-Lebrun was formed in 1955 following the marriage of Paul Pertois to Francoise Lebrun, a winegrower from Le Mesnil-sur-Oger. When they retired, the business was taken over by one of their daughters, Odile. Since then, her nephews Clément and younger brother Antoine have both joined the family business since then. Together they dedicate themselves to taking meticulous care of their 44 plots of Chardonnay vines. They have a fantastic collection of plots, each located in the top villages of the Côte des Blancs: Cramant, Mesnil, Oger, Chouilly and Oiry. In order to produce excellent Champagne, they farm sustainably with an eye toward respecting the vines and all microbiological life in the soil. In their vineyards, they enable & encourage the root networks to penetrate into the subsoil, and underlying chalky terroir, so that the grapes can achieve a magnificent aromatic concentration and rich minerality, which is then expressed exquisitely in this Blanc de Blancs.
